Jones coached Japan at the recent World Cup, leading them to a memorable victory over South Africa.
He also previously coached the Wallabies, and was part of the coaching staff that helped South Africa win the 2007 World Cup.
Jones has been released from his contract with Stormers, after just a week in charge of the Cape Town-based side.
